Beer Cheese Dip

…Beer-Cheese DipIngredients:

16 ounces cream cheese, softened

2 cups shredded cheddar

1 package dry Ranch

1/3 cup beer

Procedure: Mix everything together in bowl. Stir. Serve with fruit sticks, tortilla chips or pretzels.
Why this recipe is in this cookbook: Well beer cheese dip. I used to drink, before I got in this stupid accident. Now I take too much medicine to drink. I really used to like this dip. Not just because of the beer, but for the cheeses and the ranch too. So please really enjoy, however you cannot borrow your beer from me because I don’t drink anymore.

Guinness Pumpernickel BreadIngredients:

2 Tbsp yeast

1/2 cup warm water

8 ozs Guiness

2 tsp sugar

2 tsp molasses

1 1/2 cup flour

1/2 cup rye flour

2 Tbsp cocoa powder

Procedure: First, soak the warm water, yeast, and sugar in a bowl. Add the rest of the ingredients, stir until blended. Allow to rise for about 30 minutes. Break down, and make into 2 very kind of small, loaves. Let sit again for about 20 minutes. With floured hands, make into loaves, and bake for 35 minutes. Serve and enjoy enjoy!
Why this recipe is in this cookbook: Well, this is another one from my cookbook question. A guy from my high school Jason is a chef-manager, and I asked him to give me more ideas. So here you go, here is one of them.

Conch Chowder

 Conch ChowderIngredients: 

1/4 pound diced slab bacon with no rind

1/2 cup evo

2 jalapeno peppers, seeds removed, diced

1 large onion peeled and chopped (medium)

1/2 bunch celery sliced medium

2 carrots, peeled and chopped medium

1 green pepper, no seeds, chopped medium

1 yellow pepper no seeds, chopped medium

1 Tbsp crushed red pepper

10 new potates, chopped medium

1 quart tomatoes, peeled and crushed

1 quart tomato puree

2 bay leaves

Bouquet garni of fresh herbs: thyme, marjoram, oregano and basil

3 1/4 cups fish stock

2 1/2 quarts clam juice(bottled)

1 1/2 lbs clean, self ground conch meat

Procedure: In a large pot heat bacon, add jalapeno’s. Add the vegetables up to the potatoes. Saute then add red pepper. Add potatoes, tomatoes and puree. Reduce heat, add bay leaves then add bouquet. In a separate pot, heat fish stock and clam juice to a boil. Add to the other pot. Once the potatoes are finished, add the conch. Serve while warm. Add hot sauce if you need it.

Why this recipe is in this cookbook: How very weird, it is a seafood recipe! Also, it is a chowder but it does not have cream in it like most other chowders do. That will definitely help my kid and my mom who are lactose intolerant. It also is good for me, because I really really like healthy foods. Also, conch meat is usually frozen. Do not get it if it has freezer burn, and discard any meat that is orange. It is also very often tough, that is why it says to grind it.

No Bake Reeses Crust Cheesecake

ok, in a muffin tin, place a Reeses.  Add Jello No-Bake cheescake.  ðŸ™‚ top with Reeses Pieces.  Refrigerate.  Lots of the Reeses Pieces will sink.   When refridgerated for about 4 hours, top witn more Reeses

Stickjaw

Raspberry Chocolate Stickjaw (rasberry meringue filled with decadent chocolate caramel)

Chocolate caramel
2 cups sugar
3/4 cup water
1 cup heavy cream
1 1/2 tbs unsweetened cocoa powder
Procedure: heat sugar and water, add cream and cocoa when sugar and water have caramelized, heat more until gooey and smooth.

Rasberry meringue
6 egg whites
1/4 cup rasberry jam
3 Tbsp sugar
In a medium bowl beat egg whites until frothy and then add the sugar and beat until stiff peaks are formed.Fold in the rasberry jam with a spatula.
Preheat oven to 350
Line sheet pan with parchment paper and pipe rasberry meringue mixture onto the pan in little domes and bake for 10-15 minutes.
Put chocolate caramel in piping bag and pipe carefully (making sure not to break the meringue!) into meringue.enjoy!
My kiddo put this recipe in here. I had no idea what a “stickjaw” was, but she told me. I dont really like chocolate, but I do love raspberries, and the health values(like fat fighting). Well actually, chocolate is okay, I just dont really like milk chocolate, but I do like caramel alot.
